About the dish

Discover the story, flavours and traditions behind this local Kerala food.

The Culinary Story: Naturally Fermented & Hand-Swirled

Appam making is a traditional craft in Keralite kitchens, relying on natural overnight fermentation to achieve its signature bowl shape and contrasting textures:

  • Pure Batter: Crafted from soaked raw white rice (Pachari), cooked rice, and freshly extracted coconut milk, blended and left to ferment naturally overnight.

  • Hand-Swirled in Appachatti: Pouring a ladle of batter into a hot curved pan and swirling it creates a soft, cushion-like center surrounded by crisp, lacy edges.

  • Fragrant Coconut Milk Stew: Farm-fresh vegetables simmered gently in light coconut milk, infused with whole spices like cinnamon, cardamom, cloves, and fresh curry leaves—finished with rich coconut cream.

Ingredients

What you'll need

Lacy Appam Ingredients: Raw White Rice (Pachari - 2 cups), Fresh Grated Coconut (1 cup), Cooked Rice (1/2 cup), Coconut Water/Yeast (for fermentation), Salt (to taste), Sugar (1 tsp). Kerala Vegetable Stew (Veg Ishtu) Ingredients: Potatoes, Carrots, Beans, Green Peas, Thin Coconut Milk (2 cups), Thick Coconut Milk (1 cup), Green Chillies, Ginger, Onions, Whole Spices (Cinnamon, Cardamom, Cloves), Curry Leaves, Coconut Oil.

Preparation

How it is prepared

Appam Method: Soak rice for 4–6 hours. Grind with grated coconut and cooked rice into a smooth batter. Allow to ferment overnight for 8–10 hours. Add salt and sugar. Heat an Appachatti (curved appam pan), pour a ladle of batter, swirl once, cover, and steam for 2–3 minutes until the center rises and edges turn golden and lacy. Vegetable Stew (Veg Ishtu) Method: Sauté whole aromatics, sliced onions, green chillies, and ginger in coconut oil without browning. Add chopped vegetables and thin coconut milk; simmer until tender. Lower heat, stir in thick coconut cream, and season with sea salt. Finish with a drizzle of raw coconut oil and crisp curry leaves.
